Below, Aubrie and Brad share some advice for bakers who want to innovate in their own kitchens and enjoy the results.

The first rule of getting crazy in the kitchen is to throw out the rulebook when it comes to ingredients. Flour, eggs, and sugar may always be part of cookie recipes, but after that, the sky’s the limit.

“At Fat & Weird Cookie™ Co., we aren’t afraid to think outside the pantry,” says Brad. “Some of our most popular cookies, such as Show Me Your Bloobs or RBF, have come about because we thought ‘what if’? What if we used Nerds™ or root beer candy in our recipes? By adding our own surprising twists to our creations, we were able to defy expectations and delight our customers. Remember: keep an eye out for what is lying around in your kitchen. You may be able to use it to create a delicious recipe.”

To please taste buds, play with textures so that sweets go beyond the usual chocolate chip cookie. Aubrie suggests trying out crunchy pieces in a chewy cookie, which creates contrasting textures that intrigue the eater.

“Our B.B.C. Aubrie laughs when she recommends that home bakers write down the precise order that ingredients are added, the amounts, baking temperatures and times, and pretty much everything else about a new recipe.

“The last thing you want to do is to create something incredible, like our Schokolade cookie, and not remember what went into it,” she says. “So, even if you are one of those cooks who adds in a pinch of this and a pinch of that, create a system for keeping track of it. That way, you will be able to replicate success later on. And, on that note, note what worked and what didn’t. That’s how Brad and I created Fat & Weird Cookie™ Co. — we sampled so many cookies that we used that information to refine our own, and the rest is history.”

Brad and Aubrie recommend having fun with baking and not taking it too seriously. “There is a tendency for people to get too critical about what comes out of the oven,” Brad thinks. “When you experiment, you have to be ready for the cookies that don’t turn out well. That’s just a given. Just keep refining your recipes and baking process, and you will be well on your way to serving sweets that surprise your guests.”
