Take the tomato — what is local and traditional food after all?

Imagine biting into a sweet, ripe tomato, with its juices bursting out as your teeth pierce its flesh, with its smell and aroma providing your gustatory system with a great deal of pleasure. I am among the lucky ones to be able to recreate this feeling just by thinking about it. It must be rooted in my grandpa’s skill to only choose the best tomatoes at the local farmers’ market. As I sip my wine to the tunes of Tom Waits, my mind lingers on the thought of that floral sweetness of a tomato I don’t even currently have in the house. Food is love, happiness, beauty and much of what makes us humans. But what about that tomato? The transformation of ingredients through cooking techniques helped our brains develop. The domestication of animals and plants, some ten-thousand years ago created civilisations. Empires thrived on the trade of ingredients and wars started when food was scarce. Gone are the days when black pepper could be used as currency, and while our society may have gone slightly adrift with influencers trading an Instagram post for a meal, food has never been more exciting than it is today. How I get five “doses” daily Photo by Jenelle Hayes on Unsplash I recently learned of the specific health benefits of black tea and decided to add it to my regular diet. However, I don’t enjoy drinking it. ​Here’s how I get the benefit of five “cups” of black tea daily. It’s a matter of process over preference. But why bother? The micronutrients in both black tea and green tea are associated with a range of health benefits, particularly related to cardiovascular health. ​Both teas have anti-cancer properties and are good for diabetic patients (since polyphenols present in tea inhibit obesity by suppressing the digestion and absorption of fat and complex carbohydrates). Black tea improves our gut biome What caught my attention recently were the unique benefits of black tea, which are surprisingly different from green tea. There was just one problem. I’m not one for drinking black tea. Both black tea and green tea are rich in the same micronutrients, especially polyphenols. EP 1: It Is MY Story to Tell What does food mean to you? When I think of food, I think of home, I think of comfort, family, culture, community, an expression of self. I love food and especially I love my Nigerian food. From our standard JRice to our hearty soups, our cuisine like many other non-western cuisines are flavourful and full of life. Food is an expression of love, a sacred practice, you are meant to feel everything that was felt when making the food, it is a lesson in the history of the people and culture you are digesting. Food apart from being a means to live, is sincerely a story, an art form. So this is why I have a problem with the term and practice of the elevation and modernisation of certain cuisines. I get it change is good, it is the spice of life, but this equation of modern and white even in the food industry honestly does my head in.
