Making Depression Cake While the Economy Crumbles

Making Depression Cake While the Economy Crumbles

A Depression Cake doesn’t sound appealing. The name conjures to mind a sad party, decorated with a few pitiful balloons. It seems like a cake one might begrudgingly make to celebrate a mental health diagnosis. Yet it is not. The dessert is a part of American history, a symbol of resilience. Known as Depression or Wacky Cake, it is simply a confection that doesn’t require the use of ingredients that were normally rationed during the wartime era or too expensive to purchase during the Great Depression. Similar recipes sprung up around the US during the that time when food or money was scarce. For as long as women have been regarded as “angels of the hearth” they have also been the ones expected to save money, energy, and food. While men brought home the metaphorical bacon, women were supposed to stretch so it lasted longer than it should have. Without women at home who knew how to economize, men’s salaries would not have gone as far as they did. If children didn’t die of malnutrition in the winter, it is because their mother figured out how to feed them. The second name for the cake, Wacky Cake, was meant to instill...

The Journey of the Nigerian Food Processing Industry -3

The Journey of the Nigerian Food Processing Industry -3

Sometimes, you go to the store to buy your favorite product discover that the packaging of that product has changed for some reason or the other and wonder why. Ben Franklin wrote that the only things certain in life are death and taxes. Well, change should be part of those two because you can take a look at any product through the years and be certain that its packaging has changed. The change might be subtle or it can be major but one thing is sure, it definitely changed. Packages of food are changed or improved by the manufacturer for a variety of reasons and I am going to write about a few of those. 1. New Innovation Necessity, it is said, is the mother of invention but sometimes, inventions are accidental or are created just to be more comfortable and not because it is necessary. Most food packaging inventions follow the line of comfortability. Yes, many inventions are accidental like the discovery of glass, but most inventions in the packaging industry are scientific and precise to make a better and attractive product. Billions of dollars are funneled into the research and development of better packaging materials and designs and when...

Keep It Fresh!

Keep It Fresh!

Image from UnsplashPhoto from Unsplash Everyone’s food-buying habits have changed, to say the least, since mid-March. People can’t grocery-shop as frequently as they used to, at least not for a while. And though it might feel most practical to beeline to the frozen and canned sections of the store or freeze food you buy, we think the snap of fresh greens or the crunch of raw carrots is worth making the effort for. One of the big challenges right now is keeping those perishables fresh for weeks once you get them home. A good strategy is to choose hardy produce that can withstand time, and to learn how to properly store it for maximum shelf life. So, let’s run down the produce, storage methods, and gear that will keep you stocked with fresh fruits and vegetables. Selecting the freshest fruits and veggies is the first step to getting the longest storage life in your kitchen. According to The New Food Lover’s Companion by Sharon Tyler Herbst and Ron Herbst, leafy greens should be “richly colored” and without “any limp or yellowing leaves,” which signal that they’re past their prime. When you’re choosing root vegetables, cabbages, squash, and onions, The New Food...

La Fonda Del Sol The Abode of the Sun

La Fonda Del Sol The Abode of the Sun

Family celebration at La Fonda del Sol Restaurant Everyone knows that a sustainable business is exceedingly difficult to establish — all the more so if you are an immigrant struggling with the English language and without sufficient capital. Yet, in January 2020, Juan and Guadalupe Maldonado, together with their circle of family and friends, launched La Fonda del Sol — Comida Mexicana sin Fronteras, a restaurant in Española’s premier location: The Delta. The Delta is a sprawling compound on the town’s west side, across the Río Grande, far from the chains of corporate fast-food eateries that line Riverside Drive, headed north toward Taos. The building is known for its massive adobe construction and interior rich in hand-carved wooden surfaces. In México, the Maldonados specialized in selling computer equipment. Ten years ago, they fled Torreon, Coahuila, after a harrowing shootout by drug traffickers at their daughter’s elementary school. Their rigorous journey to New Mexico provides lessons that could be useful to fellow would-be entrepreneurs. When they finally made it to the Española Valley, they were, to some degree, able to rely on a safety net afforded by family who had previously immigrated. Still, during their first years here, they had but the bare...
